how do you take an image and make certain parts black and white. For example if I have an image of a flower, I would want to keep the flower the original color of the image and just make the background black and white.

In regards to your first question, you could duplicate the layer, make the layer on top black and white (desaturate it), then cut out from the top layer the parts you want to be in color, so the bottom (color) layer would show through. Did I explain clearly enough?
