Um, I think that's a combination of using two pictures (one version color and one B&W) and a java code for mouseovers. I have one somewhere, if that's what you're looking for.

the best userfriendly way is to make everything black&white in a graphic program.

Allot of work, but then everyone on every computer will see what you want them too see. With the filter it will only work in IE

Try desaturating all the images in Photoshop or another editor, then using CSS to create mouseover effects.
